Dievole: the Magic of Chianti Classico

On our recent trip to Italy, we met with a range of olive producers. In the town of Montegiovi on the hillside of Monte Amiata, we spent time with Davide Borselli and learned about his artisanal production. Giorgio Franci’s line is larger and his production volume is noteworthy. Both Davide and Giorgio press or crush for others, but most time is spent milling their own olives. Their traditions of craft and skill, with modern methods in technology and agriculture, fit well among our artisanal producers. And, now we introduce you to the magic of Dievole in Chianti Classico. No less an artisan, Marco Scanu, has the resources of a much larger operation. Marco is a bit of a newcomer in Tuscany, now dedicated to growing the olive oil business at Dievole, well known for its wines, and famed also for the simply lovely resort. Yes, of course, the wines and olive oils are featured, from the welcome glass of wine and olive oil tasting to the olive oil cake and olive oil panna cotta served in the renowned restaurant. And, if you stay at the resort, the theme continues with a wine fridge in your room and olive oil potions in the bath.
