Summer Salad with Controne Beans and Quattrociocchi Olivastro

Italians love their legumes (aka beans). These Controne No-Soak Beans make for quick, healthy salads. With authentic Italian ingredients, from beans to extra virgin olive oil, you’ll have the perfect popular side dish for your next party! The featured ingredients hail from Campania (the beans), Lazio (the olive oil), Sicily (the sea salt), and Emilia Romagna (the white balsamic vinegar).

1 bunch Asparagus
1 C Cherry or Grape Tomatoes
1/2 Red Bell Pepper, diced
Parsley to garnish


Cook beans according to package directions. Grill sliced asparagus if the stalks are small. If the stalks are large you may wish to microwave for 2 minutes first. Assemble salad of beans, tomatoes, peppers, and asparagus on a platter then mix and add the dressing.

 

4-5 T Fresh Lemon Juice
Shaved Pecorino Romano
Ravida Sea Salt , Pepper, 1-2 cloves minced garlic, 1 t Lemon Zest

 

Place all in a jar and shake to mix. Add to salad and toss. Shave Pecorino over the top. Remaining dressing can be refrigerated for one week.
